Ingredients
1 cup uncooked quinoa
1 cup halved cherry tomatoes
1 cup diced cucumber
1 cup feta cheese (crumbled)
1/2 cup sliced kalamata olives
1 tablespoon chopped fresh mint
1 tablespoon chopped parsley
1/4 cup roasted pine nuts
4 tablespoon lemon juice
2 tablespoon olive oil
sea salt
Preparation
1. Cook the quinoa according to the cooking instructions on the package. Let it cool.2-In a large bowl, mix the quinoa, tomatoes, cucumber, feta cheese, black olives, mint.
