Spiced Citrus Salmon
This salmon recipe contains a bouquet of citrus flavors, high quality protein, healthy omega 3 fats, and cancer fighting plant antioxidants.
Serves 3-6
1-2 pounds Alaskan salmon filets
Marinade
- 1/2 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lime juice1/4 cup freshly squeezed lemon juice1/4 cup extra virgin olive oil2 tablespoons minced shallots2 cloves garlic, crushed1-2 tablespoons sea salt or himalayan salt
- 1/2 – 1 teaspoon crushed red chili flakes
Rinse the salmon under cool water and place skin side up in a shallow baking dish. In a separate dish whisk together all ingredients for the marinade. Pour marinade over salmon, cover, refrigerate 2-4 hours or overnight.Preheat oven 400 degrees F. Pour off marinade. Turn over the salmon filets so that the skin side is down. Bake uncovered for 10 minutes per inch of salmon thickness. (One inch filet cooks for 10 minutes) Remove immediately from oven. Do not overcook. Top with Mango Salsa.Garnish with chopped Cilantro Leaves
Mango Salsa
- 2 mangos, peeled and diced
- 1 small red onion, finely diced
- 1/2 red bell pepper, finely diced
- 1 small jalapeno pepper, seeded and minced
- 2-3 tablespoons freshly squeezed lime juice
- sea salt to taste
