Recipe: Roast Chicken with Dates, Olives & Capers

Dates give a delicious, sweet twist to roast chicken.

Dates are a great source of vitamins and minerals that are integral to bone strength and boosting nervous system health.

Recent research has found that dates are an effective, natural way of reducing the risk and impact of abdominal cancer.

This is not your everyday roasted chicken recipe! For the best results, marinate the chicken for at least a day before cooking.

Gluten Free, Dairy Free
Serves 4-6

Ingredients

8 chicken legs, drumstick and thigh attached, skin on ( about 5 lbs)
5 garlic cloves, crushed
2 tbsp fresh oregano, torn, plus extra for garnish
3 tbsp red wine vinegar
3 tbsp extra virgin olive oil
4 oz pitted green olives
2 oz capers, plus 2 tbsp of their juices
2-3 oz , Medjool dates pitted and quartered lengthways
2 bay leaves
½ cup dry white wine  or dry sherry
1 tbsp honey
Salt and black pepper

Preparation

1. Place the chicken in a large, glass, non-metal or steel bowl or pan and add all of the ingredients apart from the wine or sherry and honey, along with ¾ teaspoon of salt and a good grind of black pepper.

2. Gently mix everything together, cover the bowl, and leave in the fridge to marinate for 1 to 2 days, stirring the ingredients a few times during the process.

4. Preheat the oven to 350 F.

5. Spread out the chicken legs on a large baking tray, along with all the marinade ingredients. Whisk together the wine or sherry and honey and pour over the meat.

6. Place in the oven and cook for 50 minutes, basting 2 or 3 times, until the meat is golden brown on top and cooked through.

7. Remove from the oven, transfer everything to a large platter, sprinkle over some freshly picked oregano leaves and serve.
