Coconut flour can be an excellent alternative to grain-based flours in many of your favorite recipes, allowing you to significantly reduce the overall glycemic index of the meals you serve your family, while boosting nutritional content that can help fight cancer in the kitchen!

Coconut flour is created by grating coconut meat down and removing the oil, resulting in a fine powder. Coconut is considered a superfood, boasting high fiber content, protein and a low net carb total. It’s a stable in gluten-free kitchens and has natural antibacterial and antifungal properties.

Thanks to the high fiber content, coconut flour is particularly supportive of colon health, helping to reduce your risk for colon cancer. In fact, one study focused in on the role of bacterial microflora in the gut and colon carcinogenesis (cancer growth). When coconut flour was added to the diet of research subjects, researchers saw a reduction in tumor growth!

Gluten free, Dairy Free, Vegetarian
2-4 servings

Ingredients

¼ cup coconut flour
½ teaspoon baking powder
Pinch of salt
3 tablespoons coconut oil (plus more for frying)
1 tablespoon raw honey or real maple syrup, or a low-sugar alternative like a berry compote or stevia based syrup
3 large omega 3 free range eggs
⅓ cup almond or coconut milk
½ teaspoon vanilla extract
zest of one large orange

Instructions

Place coconut flour, baking powder, salt, coconut oil, honey, eggs, almond milk, vanilla and orange zest in blender. Blend until smooth.

Heat coconut oil in a large skillet over low to medium heat.
Pour scant ¼ cupfuls of the pancake mix into the skillet and cook until the bottom has turned golden brown.
Flip and cook until golden, about 30 seconds to 1 minute.
Continue until all the batter has been used up.
Add more coconut oil to the skillet as needed.

Serve warm with the topping of your choice! Enjoy!
