Ingredients
2 cups cherry tomatoes, halved
2 tablespoons fresh oregano leaves
8 cloves garlic, peeled
1 tablespoon olive oil
4 chicken breasts
Sea salt, to taste
Freshly ground pepper, to taste
1/2 cup black olives
Basil leaves, torn
Parmesan, to garnish (optional)
Preparation
- 1. Preheat oven to 400 degrees.
2. Toss cherry tomatoes, oregano leaves, and garlic cloves with olive oil in a baking pan and roast in oven for 35 minutes.
3. Remove pan from oven, place chicken breasts on top of tomatoes, and sprinkle with salt and pepper.
4. Add olives and roast for 15 to 20 minutes until cooked through.
5. Plate chicken breasts with the cherry tomato sauce, fresh basil leaves, and a hint of grated parmesan, if desired.
