Ingredients
1 large beet
1 cup chopped parsley
1/4 cup raw sunflower seeds
2 tablespoons sesame seeds
For the dressing:
2 tablespoons Dijon mustard
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1/8 teaspoon Himalayan sea salt
Preparation
1. Peel the entire beet and spiralize it into thin noodles with spiralizer.
2. Mix all the ingredients for the dressing.
3. In a large bowl, mix the beet noodles and the dressing. Massage until the beets start to soften.
4. Add chopped parsley, sesame seeds, and sunflower seeds. Toss and serve.
