Recipe: Homemade Cashew Cream

Cashew Cream is a non dairy vegan delight.  Cashews have a natural sweetness and make a rich sauce that can be made sweet or savory.  It is incredibly easy to make and is both delicious and nutritious.  

Homemade Cashew Cream

gluten free  dairy free vegan

Rinse two cups of  whole raw cashews,

Place in a glass bowl or jar, cover with cold water and soak overnight.

Drain.  Place the soaked cashews in a blender.

For a thick cream, just cover with cold water.

For a thinner cream add enough cold water to cover by one inch. Blend until very smooth.

For a sweet cream add a few drops of vanilla or almond extract and a drizzle of maple syrup or honey

For a savory cream for vegetables add roasted garlic and a dash of sea salt, liquid aminos or gluten free soy sauce.

Can be kept in a glass container in the refrigerator for several days

Makes 2-3 cups of cream depending upon thickness and amount of liquid added
