Grab a bite (or more) of this colorful, cancer-fighting Strawberry Kale Salad!
Kale is a dark leafy green superfood packed with antioxidants, including a high concentration of carotenoids and flavonoids, which have been shown to help prevent cancer.
Kale is part of the Brassica genus, which also includes broccoli, collards, and Brussels sprouts. This group of cancer-fighting vegetables contain organosulfur compounds known as glucosinolates. When consumed, these compounds have been shown to help cancer from forming in the first place, and also induce cancer-destroying enzymes.
The sulforaphane that is produced when kale is consumed has particularly powerful anti-cancer benefits, especially for colon cancer where sulforaphane helps induce natural cancer cell death.
Strawberries are packed with cancer-protective vitamin C as well as a wide range of other phytonutrients, flavonoids, and polyphenols, like quercetin and ellagic acid. Ellagic acid has been shown to help prevent cancers of the skin, bladder, lung, esophagus, and breast.
Walnuts may slow cancer growth due to the presence of omega 3 fatty acids, antioxidants, melatonin and phytosterols. Each of these have demonstrated anti-cancer activity on their own, but it is the synergistic presence of all of these nutrients together that makes walnuts a potent cancer-fighting ingredient.

Ingredients
6 cups kale leaves ( chopped & stems removed)
1 cup halved cherry tomatoes
1 cup sliced strawberries
1 cup walnuts halves
For the dressing:
2 tablespoons tahini
2 tablespoons Dijon mustard
1/2 cup parsley
2 tablespoons lemon juice
2 tablespoons olive oil
sea salt
Preparation
1. Mix all the ingredients for the dressing in a blender.
2. In a large bowl, mix the kale and the dressing. Massage until the kale starts to soften and wilt.
3. Add the tomatoes, strawberries, and walnuts. Toss and serve.
