Ingredients
4 to 6 sweet potatoes, sliced
1/4 cup fresh parsley, minced
1 tsp. lemon zest
2 tbsp. fresh lemon juice
2 garlic cloves, minced
1/4 cup olive oil + 4 tbsp. olive oil for cooking
Sea salt and freshly ground black pepper
Preparation
1. Preheat grill to medium heat.
2. Place the sweet potatoes in a bowl with 4 tablespoons of olive oil, season to taste, and toss until coated.
3. In a small bowl, combine the parsley, lemon zest, lemon juice, garlic and olive oil; whisk until combined.
4. Place the sweet potatoes on the grill and cook for 4 to 5 minutes per side. Do not char.
5. Place the grilled potatoes back in the bowl and toss with the lemon dressing until well coated.
