Hummus is a traditional dish from the super healthy anti-cancer Mediterranean Diet packed with vegetarian/vegan protein from chickpeas, healthy fats from sesame tahini and olive oil and antioxidant herbs cumin, cayenne, parsley and coriander.
- 2 cups cooked chickpeas
- 1 1/4 cup tahini
- 4 Tbsp lemon juice- to taste
- 4 garlic cloves- crushed
- 1/4 c. ice cold water
- cumin to taste
- blend until consistency you desire
- top with drizzle of olive oil and cayenne
- garnish with fresh parsley or coriander (cilantro) leaves
