Serves 6-8
Ingredients
4 oz cashews
4 oz macadamia nuts
4 oz pecans or walnuts
3 oz whole almonds (skin on)
3 oz pumpkin seeds
1 tbsp sunflower seeds
2 tbsp cumin seeds
3 tbsp sunflower oil or sesame oil
2 tbsp honey
1 tsp fine salt
2 sprigs fresh rosemary, stems removed
2 tsp coarsely ground black pepper
2 tsp cayenne
Preparation

1. Preheat the oven to 325°F.
2. Scatter all the ingredients except for the pepper and cayenne in a roasting tray.
3. Roast for 15-17 minutes, stirring occasionally, until the nuts turn dark brown.
4. Remove, stir in the pepper and cayenne, and taste. Add salt if you like.
5. Leave to cool in the tray, stirring from time to time. Once cool, transfer to an air tight container.
