Serves 4
Ingredients
¼ cup pine nuts (variation: use walnuts or sliced almonds)
½ teaspoon fresh or ¼ teaspoon dried thyme leaves
1 tablespoon organic extra virgin olive oil or walnut oil
6 cups swiss chard coarsely chopped, thick stalks removed
Pinch sea salt
Pinch fresh ground pepper
Preparation
1. Lightly toast pine nuts in a cast iron pan over a medium heat stirring constantly until golden brown.
2. In a sauté pan heat the oil to a medium heat.
3. Add thyme leaves, swiss chard, salt, and pepper to sauté pan.
4. Sauté until leaves are tender and still bright green. Promptly remove from heat.
6. Toss sautéed swiss chard with pine nuts and serve.
