Recipe: Wild Rice Pilaf with Toasted Nuts and Goji Berries

Enrich your cancer-fighting meal with this go-to wild rice recipe!

Wild rice contains higher antioxidant, protein, mineral, and vitamin content than traditional white rice. In fact, white rice typically has no antioxidant capacity.

The antioxidants in wild rice lower the risk of heart related disorders, diabetes, and some types of cancer. They also can prevent muscular degeneration and the onset of cataracts.

Goji berries sweeten this recipe while also adding vitamin C, fiber, and iron. This super fruit also contains all the essential amino acids and is a natural anti-inflammatory.

This wild rice recipe is a nutritional powerhouse and full of flavor!

Vegan, Vegetarian, Gluten Free, Dairy Free
Serves 4

Ingredients

1 tablespoon extra virgin olive oil
½ cup shallots, thinly sliced
1 carrot, diced
2 stalks celery, diced
½ cup long grain rice
½ cup wild rice
Pinch of sea salt
¼ teaspoon saffron threads
½  teaspoon fresh rosemary, chopped
½ teaspoon fresh sage leaves, chopped
1 teaspoon fresh thyme, chopped
2 cups water or vegetable broth
⅓ cup dried goji berries (or dried cranberries)
⅓ cup pecan or walnut pieces, lightly toasted
Chopped fresh parsley or mint for garnish

Preparation

1. Heat olive oil over medium heat in a heavy bottom pot.

2. Lightly saute shallots, carrots, and celery.

3. Add rice, saffron threads, herbs and salt. Stir.

4. Add water or vegetable broth. Bring to a gentle boil.

5. Cover, reduce heat to low. Simmer 30-40 minutes without uncovering until rice is tender and fully cooked.

6. When rice is completely cooked, uncover, fluff, and toss with toasted nuts and goji berries.

7. Garnish with fresh chopped parsley or mint leaves.

Variation:  Add cherry tomatoes for bursts of flavor!
