Ingredients
1 large zucchini
1 carrot, sliced into matchsticks
1 cucumber, sliced into matchsticks
Charred eggplant dip or hummus
1 bunch pea sprouts
Preparation
1. Chop the ends off of your zucchini and use a mandolin slicer to peel into long, thin strips.
2. Lay zucchini strips flat and add a small spoonful of charred eggplant dip or hummus on one end of the zucchini.
3. Add a few matchsticks of carrots, cucumbers and a couple of pieces of pea sprouts.
4.Roll into a wrap.
5. Enjoy!
